My sister turned me onto a food blog called 101 Cookbooks a while back and I decided to start there on Monday.
I made Curried Bean Salad.
Here's how it turned out:
The lentils and beans soaked up the lemon and curry and were really lovely. The flavors got more mellow after it set for a while in my fridge, it made a lot! We started putting it on top of a bed of salad greens; the perfect dressing.
Today, Thursday, I decided to use up some things and made a skillet dish of: green beans, a sweet potato, fresh corn, red onion, garlic, and pumpkin seeds which i mixed in with some barley and a quick lemon basil dressing from our garden. It was very yummy.

She's right. They were both yummy.
ReplyDeleteGood lordy those look delicious. I really wanna try the lentil curry thing. Hmmm...lentils. I am going to have to check out that cookbook! :)
